In an old travel note is written: “The Bulgarians make various kinds of products from “fermenting milk” , which they put on the table… When they kill an animal they do not throw away anything. They wash the guts, fill them with meat and spices and leave them to dry… They treated me with home made wine and Sushenitsa. The host told me that wine goes best with such things.”
